It's really actually quite simple. Don't be intimidated, it only took about 30 minutes to go from fresh strawberries to strawberry jam ready to be frozen (no canning required). This jam is best kept refrigerated and used within 30 days or frozen for up to 1 year. I chose smaller jars to accommodate the 30 day usage.
All you need:
- 4 lbs. of fresh strawberries
- 1 1/2 c. sugar or Splenda
- a packet of no-cook fruit pectin
- plastic or glass jars
Mixing the sugar and pectin
Hulling all those sweet-smelling strawberries
Pureeing them just until crushed
Mixing the strawberries, sugar, and pectin together for 3 minutes

So reading your stories are encouraging and motivating as well. Hey, have you tried or know anything about Kombucha? Its a health drink make from sweet tea.
Thanks girl! Yes, who knew I would be interested in this type of thing during high school? Not me! ;) Yes, I have heard of Kombucha. A couple we hang out with makes it regularly.
